"Having said that..."

What's the significant of saying, "Having said that..." at the beginning of a sentence?

It announces the fact that one is about to contradict what one has just said.

'All dogs are wonderful. Having said that, my neighbour's is a flea-bitten, rabid, smelly cur.'
