Is it correct to say "rummy player extraordinaire Bill's life"

I'm not sure it's absolutely incorrect, but it's strange and awkward. I'd say "the life of Bill, rummy player extraordinaire," or reword the text some other way.

It's a cumbersome phrase. Try " rummy-player-extrodinaire Bill's life..." . Lots of folks don't like to hypenate, but I think it helps. The hyphen links multiple words into a single expression.
