Under glass

Thank you to the those who replied. The pheasant under glass reference is familiar; although, I was unaware of the specifics of the presentation. I expect that in some fine, traditional restaurants it continues. I would like to see such a dish and am curious if it would particularly offend the less carnivorous. I also like the phrase "... a life lived under glass". However, I find it to be a vague amalgam of the fixity concept and some concept of being under public scrutiny ( a la "under the microscope").
