It's "truffle" -- and that's what pigs are used for

In France, truffle pigs are female -- because truffles, even though they're beneath the ground, give off a scent that a sow finds devastatingly attractive. In fact, she mistakes it for the smell of a rarin'-to-go male pig, which is why she tries so vigorously to dig it up. Poor sow.
