I think you will find that there is a variety of lettuce called "Lambs" as I have heard of Lamb's Lettuce. If I recall correctly, a lamb's lettuce has much floppier leaves than an iceberg. I would guess somebody misheard something like flopping around like a lambs lettuce and changed it to lamb & lettuce.
