I think 'all thumbs' is a sewing or knitting reference.
I think 'hat in hand' refers to the old fashioned courtesy of a man taking his hat off, for a lady, or when going inside.

Can I ask for help too? I need the meaning of 'out of pocket'. I always thought it meant - no money. But people in Texas use it when they are not going to be home as in "I'll be out of pocket this afternoon so can you pick my child up at school and take her home with you?"

I found it listed in one search under 'money' but can't find a meaning when searching by the whole phrase.
