Seems the expression is a tongue-in-cheek admonishment to chefs and cooks everywhere to consider using liver in their recipes so as to avoid waste.
When 87-year-old Julia Child returned to TV with her ninth cooking series, she warned her co-host, Jacques Pepin, that should she keel over ... save the liver!
