: : In this instance it means to finalise the details of payment, etc. It usually implies this type of arrangement BUT, in the criminal world, it means to beat up someone; do them some sort of harm; finalise their activities in a particular sphere. Not nice in this context.

: The papers will give the owner clear instructions, how to deal with the "aftercare." This paperwork will clarify (help you sort out) the information about treatment.

The meaning of "sort out" differs, I think, between British and U.S. usage.
